Scholars say that food contains a lot more than calories. Food also contains memories. In Idaho, immigrants have long used food as a way to remember far off homes while making this patch of the inland West more familiar. In turn, those foreign foods have enriched Idaho cuisine.

But in this installment of Edible Idaho, Guy Hand admits that his Scottish wife brought one food from home that he finds a little hard to swallow.
